Ingredients
- 4 (4-6 oz) salmon filets
- 3 tbsp low sodium soy sauce or tamari
- 2 tbsp honey
- 2 tbsp sriracha
- 2 tsp minced garlic
- 3 tbsp water
- 2 cups cooked white rice
- 1 avocado, sliced
- 1 cucumber, sliced
- 1 cup edamame, cooked
- 1/2 cup sriracha mayo
- Red pepper flakes
- Sesame seeds

Cut salmon into 1 inch cubes. Remove skin if preferred.

Whisk together soy sauce, honey, sriracha, garlic, and water in a large bowl.

Add salmon and marinate for 20 minutes to 1 hour.

Heat a large skillet with oil over medium-high heat.

Add salmon (reserve marinade) and cook 2-3 minutes on each side until crispy.

Add remaining marinade and cook until sauce thickens.

Assemble bowls with rice, salmon, avocado, cucumber, and edamame.

Top with sriracha mayo, red pepper flakes, and sesame seeds.
