- 1 lb fresh salmon
- Salt and pepper to taste
- 1/4 tsp garlic powder
- Flour for dredging
- 1 tbsp olive oil
- 1 tbsp butter
- 1/3 cup chicken broth or dry white wine
- 1/3 cup pesto
- 1/4 cup heavy cream
- 1/2 tsp lemon juice
- Fresh parmesan cheese
Instructions
- 1
Boil salted water and cook pasta al dente. Drain and set aside.

Season salmon with garlic powder, salt, and pepper. Coat in flour on all sides.
- 3
Heat oil and butter in a skillet over medium-high heat.
- 4
Cook salmon 3 minutes per side until golden. Remove and set aside.
- 5
Don't wipe the pan - add chicken broth and pesto, scraping up the browned bits.
- 6
Add cream and lemon juice, let bubble for 1 minute.
- 7
Return salmon to pan, break into pieces, and cook 3-5 minutes until done.
- 8
Toss with pasta and serve with parmesan cheese.
Pro Tip
The brown bits in the pan are flavor gold - don't skip that step!
