Protein Pancakes

- Kodiak mix OR:
- 1 scoop protein powder
- 1 large banana
- 1/8 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 tsp vanilla extract
- Peanut butter for topping
- Fruit syrup for topping
Instructions

Mash the banana in a bowl until smooth.

Add protein powder, egg, cinnamon, baking powder, salt, and vanilla extract.

Mix until well combined (batter will be thick).

Heat a non-stick pan over medium heat.

Pour small circles of batter and cook until bubbles form on top.

Flip and cook another 1-2 minutes.

Top with peanut butter and fruit syrup.

If using Kodiak mix, follow package directions. These freeze well for meal prep!
